Kachori is a popular Indian snack known for its crispy, golden shell and flavorful, spiced filling. This deep-fried delight is a favorite treat for festive occasions, tea-time gatherings, or simply satisfying snack cravings.

For the Dough:

  • All-purpose flour (Maida) – 2 cups
  • Semolina (Sooji) – 2 tbsp (for crispiness)
  • Salt – ½ tsp
  • Ghee / Oil – 4 tbsp
  • Water – as needed (to knead the dough)
For the Filling (Spiced Lentil Mix):
  • Moong dal (yellow lentils) – ½ cup (soaked for 2 hours)
  • Fennel seeds (Saunf) – 1 tsp
  • Coriander seeds – 1 tsp (coarsely crushed)
  • Cumin seeds – 1 tsp
  • Hing (Asafoetida) – ¼ tsp
  • Red chili powder – 1 tsp
  • Garam masala – ½ tsp
  • Turmeric powder – ½ tsp
  • Dry mango powder (Amchur) – ½ tsp
  • Salt – to taste
  • Oil – 1 tbsp (for roasting the filling)
For Frying:
  • Oil – for deep frying

Step 1: Prepare the Dough
  1. In a bowl, mix all-purpose flour, semolina, salt, and ghee.
  2. Rub the mixture with fingers until it resembles breadcrumbs.
  3. Gradually add water and knead into a firm but smooth dough.
  4. Cover and let it rest for 30 minutes.
Step 2: Prepare the Filling
  1. Heat 1 tbsp oil in a pan and add cumin seeds, fennel seeds, coriander seeds, and hing.
  2. Add soaked & drained moong dal and sauté for 2 minutes.
  3. Mix in red chili powder, turmeric, garam masala, salt, and dry mango powder.
  4. Cook for 2-3 minutes until the dal is dry and fragrant.
  5. Let it cool completely before using.
Step 3: Shape & Fill the Kachori
  1. Divide the dough into small equal portions and roll into balls.
  2. Flatten each ball and place a spoonful of filling in the center.
  3. Seal the edges tightly and gently flatten again.
Step 4: Frying the Kachori
  1. Heat oil in a deep pan on low-medium heat.
  2. Drop the filled kachoris slowly into the oil.
  3. Fry on low heat until golden brown and crispy.
  4. Drain excess oil on paper towels.
