Ingredients:

- Turmeric powder – ¼ tsp
- Cumin seeds – ½ tsp
- Ajwain (Carom seeds) – ¼ tsp
- Salt – to taste
- Szechuan sauce (or any spicy sauce) – 2 tbsp (optional, for extra flavor)
- Water – as needed (for kneading the dough)
- Oil – 2 tbsp (for mixing)
For Frying:
- Oil – for deep frying
Step 1: Prepare the Dough
- In a large bowl, mix the rice flour, gram flour, chili powder, turmeric powder, cumin seeds, ajwain, and salt.
- Add oil and rub it into the flour mixture until it resembles breadcrumbs.
- Gradually add water to knead into a smooth dough. The dough should be firm but smooth and slightly stiff.
- Optionally, mix in Szechuan sauce or any spicy sauce for an extra kick.
Step 2: Shape the Chakali
- Fit a chakali maker (or a piping bag with a star nozzle) with the dough.
- Heat oil in a deep frying pan over medium heat.
- On a sheet of parchment paper or directly over the pan, press the dough through the chakali maker, forming spirals.
- Cut the chakali into small, bite-sized spirals or leave them longer, as preferred.
Step 3: Frying
- Once the oil is hot, carefully drop the chakali into the oil in batches.
- Fry them until golden brown and crispy, ensuring to flip them halfway through for even cooking.
- Remove from oil and drain excess oil using paper towels.
Step 4: Cooling and Serving
- Allow the Sezwan Chakali to cool completely before storing.
- Serve them with tea, coffee, or mint chutney for a delicious snack.
