Ingredients:
- Raw Bananas (Nendran or any firm variety) – 2 large
- Black Pepper Powder (Kala Miri) – 1 tsp (adjust to taste)
- Rock Salt (Sendha Namak) or Regular Salt – to taste
- Turmeric Powder – ½ tsp (for color)
- Lemon Juice (Optional, for extra tanginess) – ½ tsp
- Oil (for deep frying)
Step 1: Preparing the Bananas
- Peel the raw bananas and soak them in turmeric water (mix turmeric powder with water) for 10 minutes to prevent browning.
- Pat dry using a clean cloth or paper towel.
Step 2: Slicing the Bananas
- Using a sharp knife or mandoline slicer, slice the bananas into thin, even rounds.
- Ensure the slices are uniform in thickness to ensure even frying.
Step 3: Frying the Wafers
- Heat oil in a deep frying pan over medium heat.
- Drop the banana slices into the hot oil in small batches, ensuring they don’t overlap.
- Fry until the chips turn crispy and golden.
- Remove and place them on a paper towel to absorb excess oil.
Step 4: Seasoning & Storing
- While still warm, sprinkle black pepper powder (kala miri) and salt evenly over the wafers.
- Toss gently to coat the chips with seasoning.
- Allow the wafers to cool completely before storing in an airtight container.
