Ingredients:

  • Raw Peanuts (Shengdana) – 1 cup (200g)
  • Besan (Gram Flour) – 2 tbsp
  • Rice Flour – 1 tbsp (for extra crispiness)
  • Red Chili Powder – 1 tsp (adjust to taste)
  • Turmeric Powder – ½ tsp
  • Cumin Powder (Jeera Powder) – ½ tsp
  • Chaat Masala – ½ tsp (optional, for extra tanginess)
  • Rock Salt (Sendha Namak) or Regular Salt – to taste
  • Sugar – ½ tsp (optional, for a balanced taste)
  • Black Pepper Powder – ½ tsp
  • Curry Leaves (Kadi Patta) – 8-10 leaves (optional, for extra flavor)
  • Oil or Ghee – 1 tbsp
  • Water – 2 tbsp (for coating)
Step 1: Preparing the Masala Coating
  1. In a mixing bowl, combine besan, rice flour, red chili powder, turmeric, cumin powder, black pepper powder, chaat masala, salt, and sugar.
  2. Add 1 tbsp oil/ghee and mix well.
  3. Add water gradually and mix until the peanuts are well coated with the masala mixture.
Step 2: Roasting/Frying the Peanuts
Option 1: Deep Frying
  1. Heat oil in a deep pan.
  2. Fry the coated peanuts in batches on medium heat until golden and crispy.
  3. Drain on a paper towel to remove excess oil.
Option 2: Air Frying (Healthier Method)
  1. Preheat the air fryer to 180°C (350°F).
  2. Spread the masala-coated peanuts evenly in the basket.
  3. Air fry for 8-10 minutes, shaking the basket occasionally for even roasting.
Option 3: Baking (Oil-Free Option)
  1. Preheat the oven to 180°C (350°F).
  2. Spread peanuts on a baking tray lined with parchment paper.
  3. Bake for 15-18 minutes, stirring occasionally, until crispy.
