Ingredients:

For Bhajani Flour (Homemade or Store-Bought)
  • Rice – 2 cups
  • Chana Dal (Split Bengal Gram) – 1 cup
  • Urad Dal (Split Black Gram) – ½ cup
  • Moong Dal (Yellow Lentils) – ½ cup
  • Cumin Seeds (Jeera) – 1 tbsp
  • Coriander Seeds (Dhaniya) – 1 tbsp
For Chakali Dough
  • Bhajani Flour – 2 cups
  • Sesame Seeds (Til) – 1 tbsp
  • Ajwain (Carom Seeds) – ½ tsp
  • Turmeric Powder – ¼ tsp
  • Red Chili Powder – 1 tsp (adjust to taste)
  • Hing (Asafoetida) – a pinch
  • Salt – to taste
  • Butter or Oil – 2 tbsp
  • Water – as needed (to knead the dough)
  • Oil – for frying
Step 1: Preparing the Bhajani Flour (Skip if Using Store-Bought)
  1. Dry roast rice, chana dal, urad dal, and moong dal separately in a pan until aromatic.
  2. Roast cumin seeds and coriander seeds until fragrant.
  3. Let them cool and grind them together into a fine Bhajani flour.
Step 2: Preparing the Dough
  1. In a mixing bowl, take Bhajani flour and add sesame seeds, ajwain, turmeric, red chili powder, hing, and salt.
  2. Add melted butter or hot oil and mix well.
  3. Gradually add warm water and knead into a smooth but firm dough.
  4. Cover and let the dough rest for 15-20 minutes.
Step 3: Shaping the Chakali
  1. Grease a chakali/murukku maker and fit it with a star-shaped nozzle.
  2. Fill the chakali press with dough and press out spirals onto a greased plate or parchment paper.
Step 4: Frying the Chakali
  1. Heat oil in a deep frying pan over medium heat.
  2. Carefully drop the chakalis into the hot oil and fry until golden brown and crispy.
  3. Drain on paper towels to remove excess oil.

Step 5: Cooling & Storing

  1. Let the chakali cool completely before storing.
  2. Keep in an airtight container to maintain crispiness.
