Made with a delectable filling of coconut, sesame seeds, and a blend of spices, all rolled into a dough and deep-fried to perfection, Bakarwadi is a favorite among snack lovers. Ingredients:

For the Outer Dough:
  • All-purpose flour (Maida) – 1 cup
  • Gram flour (Besan) – ¼ cup
  • Salt – to taste
  • Turmeric powder – ¼ tsp
  • Oil – 2 tbsp (for dough)
  • Water – as needed to knead
For the Filling:
  • Dry coconut (grated) – ¼ cup
  • Sesame seeds – 1 tbsp
  • Fennel seeds (Saunf) – 1 tsp
  • Poppy seeds (Khus Khus) – ½ tsp
  • Coriander powder – 1 tsp
  • Cumin powder – 1 tsp
  • Red chili powder – 1 tsp
  • Amchur (Dry mango powder) – ½ tsp
  • Sugar – ½ tsp
  • Salt – to taste
  • Oil – 1 tbsp (for roasting filling)
For Frying:
  • Oil – for deep frying
Step 1: Prepare the Dough
  1. In a mixing bowl, combine all-purpose flour, gram flour, turmeric, salt, and 2 tbsp oil.
  2. Mix well until the flour becomes crumbly.
  3. Gradually add water and knead into a stiff dough. Cover and let it rest for 15-20 minutes.
Step 2: Prepare the Filling
  1. Heat 1 tbsp oil in a pan and roast sesame seeds, fennel seeds, poppy seeds, and grated coconut until golden brown.
  2. Add coriander powder, cumin powder, red chili powder, amchur, sugar, and salt. Mix well and turn off the heat.
  3. Let the filling cool completely before using.
Step 3: Rolling and Shaping Bakarwadi
  1. Roll out the dough into a thin rectangular sheet.
  2. Evenly spread the prepared filling over the dough.
  3. Roll the dough tightly from one end to form a log.
  4. Cut the log into small, round spirals.
Step 4: Frying
  1. Heat oil in a deep pan over medium heat.
  2. Fry the bakarwadi pieces in batches until they turn golden brown and crispy.
  3. Drain on paper towels to remove excess oil.
Step 5: Cooling & Storing
  1. Let the bakarwadi cool completely before storing.
  2. Store in an airtight container for up to 3-4 weeks.
