Lasun Sev is a flavorful, crunchy snack that brings together the bold taste of garlic (lasun) and the light, crispy texture of sev (fried gram flour noodles). Main Ingredients:

Gram flour (Besan) – 2 cups
Rice flour – 2 tbsp (for extra crispiness)
Garlic paste – 2 tbsp
Red chili powder – 1 tsp (adjust for spice level)
Turmeric powder – ½ tsp
Asafoetida (Hing) – ¼ tsp
Salt – to taste
Ajwain (Carom seeds) – ½ tsp
Oil – 2 tbsp (for dough)
Water – as needed (to make the dough)
Oil – for deep frying

Optional Ingredients:

Black pepper powder – ½ tsp (for extra spice)
Chaat masala – ½ tsp (for tangy flavor)
Curry leaves – for garnish

Step 1: Prepare the Dough
1. In a mixing bowl, add besan, rice flour, garlic paste, red chili powder, turmeric, asafoetida, ajwain, and salt.
2. Heat 2 tbsp oil and pour it over the flour mixture (this makes the sev crispy).
3. Mix well until the flour becomes crumbly.
4. Gradually add water and knead into a soft, smooth dough (not too sticky).
Step 2: Shaping the Sev
1. Grease the sev maker (chakli press) with a fine-holed disc.
2. Fill the dough inside the sev maker.
Step 3: Frying the Sev
1. Heat oil in a deep pan on medium flame.
2. Press the sev maker directly over the hot oil and fry in circular motions.
3. Fry until golden brown and crispy.
4. Remove and drain excess oil on paper towels.
Step 4: Cooling & Storing
1. Once cooled, sprinkle chaat masala for extra flavor.
2. Store in an airtight container for freshness.
