Ingredients:

- Gram flour (Besan) – ½ cup
- Chili powder – 1 tsp (adjust to taste)
- Cumin seeds – 1 tsp
- Ajwain (Carom seeds) – ¼ tsp
- Caraway seeds (optional) – ½ tsp
- Hing (asafoetida) – a pinch
- Salt – to taste
- Turmeric powder – ¼ tsp
- Oil – 1 tbsp (for the dough)
- Water – as needed to knead the dough
- Sesame seeds – 1 tbsp (optional, for extra crunch)

- Oil – for deep frying
Step 1: Prepare the Dough
- In a mixing bowl, combine rice flour, gram flour, chili powder, cumin seeds, ajwain, sesame seeds (if using), turmeric powder, salt, and hing.
- Add 1 tbsp oil to the dry ingredients and mix until it resembles breadcrumbs.
- Gradually add water, a little at a time, and knead the mixture into a smooth and firm dough.
- The dough should be stiff enough to hold its shape but not too hard.
Step 2: Shape the Chakli
- Fit a chakli maker (or a piping bag with a star nozzle) with the dough.
- Heat oil in a deep pan over medium heat.
- Press the dough into spirals or twists on a piece of parchment paper or directly into the hot oil.
- You can shape them in a twisted form, giving them the unique “Tikkat” shape.
Step 3: Frying the Chakli
- Once the oil is hot, carefully drop the shaped chakli into the oil.
- Fry on medium-low heat for about 5-7 minutes, or until they are golden brown and crispy.
- Flip halfway through for even frying, ensuring they cook uniformly and are crisp on both sides.
- Remove from the oil and drain on paper towels to remove excess oil.
Step 4: Cooling and Storing
- Let the Tikkat Chakli cool completely at room temperature.
- Once cooled, store them in an airtight container to maintain their crunchiness
