Ingredients:
- Potatoes – 2 medium-sized (peeled and thinly sliced)

Step 1: Preparing the Potatoes
- Peel and thinly slice the potatoes using a mandolin slicer for even and thin slices.
- Soak the potato slices in cold water for 10-15 minutes to remove excess starch and prevent them from turning brown.
- Drain and pat the slices dry with a clean kitchen towel or paper towel to remove moisture.
Step 2: Frying the Potato Slices
- Heat oil in a deep pan or kadhai over medium heat for frying.
- Test the oil by dropping one slice of potato into it. If it sizzles and rises, the oil is ready.
- Fry the potato slices in batches, making sure not to overcrowd the pan. Fry until the slices turn golden brown and crispy. This will take around 3-5 minutes per batch, depending on the thickness of the slices.
- Use a slotted spoon to remove the fried slices and place them on a paper towel to drain excess oil.
Step 3: Seasoning the Wafers
- While the wafers are still hot, sprinkle them with salt, black salt, and any other spices you prefer (e.g., chili powder, cumin powder, turmeric powder).
- Gently toss the wafers to coat them evenly with the seasoning.

- Let the wafers cool completely.
- Once cooled, store them in an airtight container to keep them fresh and crispy.
