Ingredients:

For the Dough:
  • All-purpose flour (Maida) – 1 cup
  • Gram flour (Besan) – ½ cup
  • Semolina (Sooji) – 1 tbsp
  • Carom seeds (Ajwain) – ½ tsp
  • Turmeric powder – ¼ tsp
  • Salt – to taste
  • Ghee or oil – 2 tbsp
  • Water – as needed to knead the dough
For the Filling:
  • Dry coconut (grated) – ¼ cup
  • Sesame seeds – 1 tbsp
  • Fennel seeds (Saunf) – 1 tsp
  • Cumin seeds – 1 tsp
  • Coriander powder – 1 tsp
  • Red chili powder – 1 tsp
  • Garam masala – ½ tsp
  • Sugar – 1 tsp
  • Tamarind paste – 1 tbsp
  • Salt – to taste

For Frying:

  • Oil – for deep frying

Step 1: Prepare the Dough
  1. In a bowl, mix all-purpose flour, gram flour, semolina, carom seeds, turmeric powder, and salt.
  2. Add ghee or oil to the dry ingredients and mix until it resembles breadcrumbs.
  3. Gradually add water and knead into a firm dough. Cover the dough and let it rest for 20-30 minutes.
Step 2: Prepare the Filling
  1. Dry roast sesame seeds, fennel seeds, and cumin seeds in a pan until golden and fragrant.
  2. Mix the roasted seeds with grated coconut, coriander powder, red chili powder, garam masala, sugar, and salt.
  3. Add tamarind paste to bind the mixture together and form a dry, spiced filling. Set aside to cool.
Step 3: Shape the Bakarwadi
  1. Roll out the dough into a thin rectangular sheet.
  2. Evenly spread the filling mixture over the dough.
  3. Roll the dough tightly to form a log shape.
  4. Cut the roll into small, bite-sized pieces.
Step 4: Frying the Mini Bakarwadi
  1. Heat oil in a deep pan over low-medium heat.
  2. Carefully drop the bakarwadi pieces into the hot oil and fry them on low heat to ensure they cook evenly.
  3. Fry until golden brown and crispy. Drain the excess oil on paper towels.
