Ingredients:
- Sabudana (Tapioca pearls) – 1 cup (approximately 250g)
- Peanuts – ½ cup (roasted)
- Curry leaves – 10-12
- Green chilies – 2-3 (chopped)
- Cumin seeds – 1 tsp
- Mustard seeds – 1 tsp
- Turmeric powder – ½ tsp
- Salt – to taste
- Sugar – 1 tsp (optional)
- Ghee or oil – 2 tbsp
- Lemon juice – 1 tbsp (optional)
Step 1: Prepare the Sabudana
- Soak the sabudana in water for about 30 minutes. Drain off any excess water.
- Let the soaked sabudana sit for 15 minutes to allow it to absorb moisture and become fluffy.
Step 2: Roasting Sabudana
- In a pan, heat 1 tbsp ghee or oil.
- Add the soaked sabudana in batches, stirring constantly to ensure that the pearls don’t stick together.
- Roast the sabudana on low-medium heat until it turns crispy (about 10-12 minutes). Remove and set aside.
Step 3: Prepare the Seasoning
- In the same pan, heat the remaining 1 tbsp ghee or oil.
- Add mustard seeds and cumin seeds. Let them splutter.
- Add the chopped green chilies, curry leaves, and roasted peanuts.
- Stir-fry for a couple of minutes.
- Sprinkle in the turmeric powder, salt, and sugar (if using). Stir well to combine.
Step 4: Mix Sabudana with Seasoning
- Add the roasted sabudana back into the pan.
- Toss everything together well to ensure the sabudana is evenly coated with the seasoning.
- Optional: Add lemon juice for a tangy finish and mix well.
- Turn off the heat and let it cool completely.
