Sabudana Chivda is a crispy, crunchy, and flavorful snack made from sabudana (tapioca pearls), often enjoyed during fasting (vrat) or as a quick snack for any time of the day. This spicy, tangy, and slightly sweet mix is made with roasted sabudana, peanuts, and seasoned with various spices, making it a great energy-boosting snack that is light and nutritious.

Ingredients:

  • Sabudana (Tapioca pearls) – 1 cup (approximately 250g)
  • Peanuts – ½ cup (roasted)
  • Curry leaves – 10-12
  • Green chilies – 2-3 (chopped)
  • Cumin seeds – 1 tsp
  • Mustard seeds – 1 tsp
  • Turmeric powder – ½ tsp
  • Salt – to taste
  • Sugar – 1 tsp (optional)
  • Ghee or oil – 2 tbsp
  • Lemon juice – 1 tbsp (optional)
Step 1: Prepare the Sabudana
  1. Soak the sabudana in water for about 30 minutes. Drain off any excess water.
  2. Let the soaked sabudana sit for 15 minutes to allow it to absorb moisture and become fluffy.
Step 2: Roasting Sabudana
  1. In a pan, heat 1 tbsp ghee or oil.
  2. Add the soaked sabudana in batches, stirring constantly to ensure that the pearls don’t stick together.
  3. Roast the sabudana on low-medium heat until it turns crispy (about 10-12 minutes). Remove and set aside.
Step 3: Prepare the Seasoning
  1. In the same pan, heat the remaining 1 tbsp ghee or oil.
  2. Add mustard seeds and cumin seeds. Let them splutter.
  3. Add the chopped green chilies, curry leaves, and roasted peanuts.
  4. Stir-fry for a couple of minutes.
  5. Sprinkle in the turmeric powder, salt, and sugar (if using). Stir well to combine.
Step 4: Mix Sabudana with Seasoning
  1. Add the roasted sabudana back into the pan.
  2. Toss everything together well to ensure the sabudana is evenly coated with the seasoning.
  3. Optional: Add lemon juice for a tangy finish and mix well.
  4. Turn off the heat and let it cool completely.
