Ingredients:

For the Dough:
  • Rice flour – 1 cup
  • Gram flour (Besan) – ½ cup
  • Chili powder – 1 tsp (adjust to taste)
  • Cumin seeds – 1 tsp
  • Ajwain (Carom seeds) – ¼ tsp
  • Caraway seeds (optional) – ½ tsp
  • Hing (asafoetida) – a pinch
  • Salt – to taste
  • Turmeric powder – ¼ tsp
  • Oil – 1 tbsp (for the dough)
  • Water – as needed to knead the dough
  • Sesame seeds – 1 tbsp (optional, for extra crunch)
For Frying:
  • Oil – for deep frying
Step 1: Prepare the Dough
  1. In a mixing bowl, combine rice flour, gram flour, chili powder, cumin seeds, ajwain, sesame seeds (if using), turmeric powder, salt, and hing.
  2. Add 1 tbsp oil to the dry ingredients and mix until it resembles breadcrumbs.
  3. Gradually add water, a little at a time, and knead the mixture into a smooth and firm dough.
  4. The dough should be stiff enough to hold its shape but not too hard.
Step 2: Shape the Chakli
  1. Fit a chakli maker (or a piping bag with a star nozzle) with the dough.
  2. Heat oil in a deep pan over medium heat.
  3. Press the dough into spirals or twists on a piece of parchment paper or directly into the hot oil.
  4. You can shape them in a twisted form, giving them the unique “Tikkat” shape.
Step 3: Frying the Chakli
  1. Once the oil is hot, carefully drop the shaped chakli into the oil.
  2. Fry on medium-low heat for about 5-7 minutes, or until they are golden brown and crispy.
  3. Flip halfway through for even frying, ensuring they cook uniformly and are crisp on both sides.
  4. Remove from the oil and drain on paper towels to remove excess oil.
Step 4: Cooling and Storing
  1. Let the Tikkat Chakli cool completely at room temperature.
  2. Once cooled, store them in an airtight container to maintain their crunchiness
