Ingredients:
- Potatoes – 2 medium-sized (peeled and cut into thin sticks)
- Rice Flour – 2 tbsp (for extra crispiness)
- Corn Flour – 1 tbsp (optional, for extra crunch)
- Chili Powder – ½ tsp (adjust to taste)
- Cumin Powder – ½ tsp
- Turmeric Powder – ½ tsp
- Salt – to taste
- Black Salt – to taste (optional for a tangy flavor)
- Chaat Masala – ½ tsp (optional for an additional zing)
- Oil – for deep frying
- Water – as needed to make a batter
Step 1: Preparing the Potatoes
- Peel the potatoes and cut them into thin, long sticks (about 3-4 inches long).
- Soak the potato sticks in water for 15-20 minutes to remove excess starch. This helps the sticks become extra crispy when fried.
- Drain the water and pat the potato sticks dry using a clean kitchen towel or paper towel.
Step 2: Preparing the Batter
- In a mixing bowl, combine rice flour, corn flour, chili powder, cumin powder, turmeric powder, and salt.
- Add a little water to the dry ingredients to make a thick batter that will coat the potato sticks.
- Coat each potato stick with this batter, ensuring they are evenly coated with the spice mixture.
Step 3: Frying the Potato Sticks
- Heat oil in a deep frying pan or kadhai on medium-high heat.
- Once the oil is hot, carefully add the bathed potato sticks into the oil, one batch at a time.
- Fry the sticks until they turn golden brown and crispy (about 3-5 minutes per batch). Stir occasionally to ensure even frying.
- Use a slotted spoon to remove the sticks from the oil and place them on a paper towel to drain excess oil.
Step 4: Seasoning & Cooling
- While the sticks are still hot, sprinkle with black salt, chaat masala, and additional chili powder (optional) for extra flavor.
- Let the Potato Sticks Tikkat cool completely before storing them in an airtight container.
