Ingredients:
  • Potatoes – 2 medium-sized (peeled and cut into thin sticks)
  • Rice Flour – 2 tbsp (for extra crispiness)
  • Corn Flour – 1 tbsp (optional, for extra crunch)
  • Chili Powder – ½ tsp (adjust to taste)
  • Cumin Powder – ½ tsp
  • Turmeric Powder – ½ tsp
  • Salt – to taste
  • Black Salt – to taste (optional for a tangy flavor)
  • Chaat Masala – ½ tsp (optional for an additional zing)
  • Oil – for deep frying
  • Water – as needed to make a batter
Step 1: Preparing the Potatoes
  1. Peel the potatoes and cut them into thin, long sticks (about 3-4 inches long).
  2. Soak the potato sticks in water for 15-20 minutes to remove excess starch. This helps the sticks become extra crispy when fried.
  3. Drain the water and pat the potato sticks dry using a clean kitchen towel or paper towel.
Step 2: Preparing the Batter
  1. In a mixing bowl, combine rice flour, corn flour, chili powder, cumin powder, turmeric powder, and salt.
  2. Add a little water to the dry ingredients to make a thick batter that will coat the potato sticks.
  3. Coat each potato stick with this batter, ensuring they are evenly coated with the spice mixture.
Step 3: Frying the Potato Sticks
  1. Heat oil in a deep frying pan or kadhai on medium-high heat.
  2. Once the oil is hot, carefully add the bathed potato sticks into the oil, one batch at a time.
  3. Fry the sticks until they turn golden brown and crispy (about 3-5 minutes per batch). Stir occasionally to ensure even frying.
  4. Use a slotted spoon to remove the sticks from the oil and place them on a paper towel to drain excess oil.
Step 4: Seasoning & Cooling
  1. While the sticks are still hot, sprinkle with black salt, chaat masala, and additional chili powder (optional) for extra flavor.
