Ingredients:
For Bhajani Flour (Homemade or Store-Bought)
- Rice – 2 cups
- Chana Dal (Split Bengal Gram) – 1 cup
- Urad Dal (Split Black Gram) – ½ cup
- Moong Dal (Yellow Lentils) – ½ cup
- Cumin Seeds (Jeera) – 1 tbsp
- Coriander Seeds (Dhaniya) – 1 tbsp
For Chakali Dough
- Bhajani Flour – 2 cups
- Sesame Seeds (Til) – 1 tbsp
- Ajwain (Carom Seeds) – ½ tsp
- Turmeric Powder – ¼ tsp
- Red Chili Powder – 1 tsp (adjust to taste)
- Hing (Asafoetida) – a pinch
- Salt – to taste
- Butter or Oil – 2 tbsp
- Water – as needed (to knead the dough)
- Oil – for frying
Step 1: Preparing the Bhajani Flour (Skip if Using Store-Bought)
- Dry roast rice, chana dal, urad dal, and moong dal separately in a pan until aromatic.
- Roast cumin seeds and coriander seeds until fragrant.
- Let them cool and grind them together into a fine Bhajani flour.
Step 2: Preparing the Dough
- In a mixing bowl, take Bhajani flour and add sesame seeds, ajwain, turmeric, red chili powder, hing, and salt.
- Add melted butter or hot oil and mix well.
- Gradually add warm water and knead into a smooth but firm dough.
- Cover and let the dough rest for 15-20 minutes.
Step 3: Shaping the Chakali
- Grease a chakali/murukku maker and fit it with a star-shaped nozzle.
- Fill the chakali press with dough and press out spirals onto a greased plate or parchment paper.
Step 4: Frying the Chakali
- Heat oil in a deep frying pan over medium heat.
- Carefully drop the chakalis into the hot oil and fry until golden brown and crispy.
- Drain on paper towels to remove excess oil.
Step 5: Cooling & Storing
- Let the chakali cool completely before storing.
- Keep in an airtight container to maintain crispiness.
